Serves 4
2 courgettes
1 red chilli
3 cloves of garlic
400g linguine
200g mixed crab meat
1 lemon
½ small bunch of parsley
salt and olive oil
Bring a large pan of salted water up to a boil.
Grate your courgettes on a box grater. Finely chop your chilli and grate your garlic.
Add a few tbsp of olive oil to a large sauté pan, and get it over a low heat. Add your chilli and garlic to the pan, and cook these out for a minute unitl they are fragrant.
Add your grated courgette to the pan, and turn up the heat to medium. Cook these for 5 minutes until they have reduced down by about half.
Get your linguine in the boiling water, and cook it until it is al dente (about 2 minutes less than the packet tells you normally).
Tip your crab meat into the pan, and warm this through for a couple of minutes.
Finely chop your parsley leaves, then get this in the pan, along with the zest and juice of your lemon. Tong your linguine into the pan, then add a splash of pasta water. Toss it all together until you have a glossy sauce. Season it to taste with salt.
Tong your linguine into bowls, and serve it up.
