The Recipe
For as long as I can remember, sausages have been a central food of my diet. As a child, my favourite meal with sausages and mash with baked beans (sometimes fashioned into a mash castle with a bean moat, with the help of my Dad), and if I’m being really honest, it is probably still top 5 meals for me. On tired days when cooking feels impossible, it is the meal I dream of most.
When I have the energy to seek out a homemade, less processed version, I’ll go in this direction instead. Posh jars of beans are more expensive than canned ones, but they do make a massive difference in the texture and flavour of your cooking. Bold Bean Co have recently started doing borlotti beans, and I have developed a bit of a fixation with them. They are plump with a lovely bite, and creamy, nutty middles. I love them in salads, but they are equally good braised, as they are here.
